Making your own vegetarian macaroni and cheese is so easy and healthier than that store –bought versions.  Vegetarian mac & cheese is also super versatile dish because you can use any ingredient you like. 1. Mac & cheese with broccoli

This creamy mac & cheese with broccoli is a simple recipe that the entire family will love to eat. This is also a great way to sneak broccoli into your diet.

2 cups macaroni, whole-wheat or gluten-free macaroni

1 cup broccoli florets, cooked for 5 minutes and drained

1 garlic clove, minced

1 onion, diced

3 tbsp. olive oil

2 tbsp. flour whole-wheat or gluten-free

1 cup soy milk

1 cup water

1/3 tsp. chili powder

1 cup shredded sharp cheddar cheese or vegan cheese

Salt and pepper, to taste

Instructions:

Preheat the oven to 400 ° F.Cook the macaroni according to package instructions. Drain. Add the broccoli and stir gently until well combined. Transfer to a greased baking dish. In a saucepan, heat the olive oil. Add the onions and cook for 3 minutes.  Add the flour and garlic and stir until blended (about 1 minute). Add the milk and water and cook for 2 minutes. Add the cheese and chili powder and stir until combined. Pour the mixture over the macaroni and stir again. Bake for 15 minutes. Serve and enjoy!

1 cup peas, cooked, drained and rinsed

1 cup carrots, cooked, drained and rinsed

2 cups macaroni, whole-wheat or gluten-free macaroni

1 cup milk or soy milk

3 tbsp. olive oil

2 tbsp.  Parmesan cheese or vegan cheese

1 egg

Instructions:

In a bowl, add all the ingredients and mix gently until well incorporated. Transfer the mixture into a greased baking pan. Bake for 20 minutes. Serve warm.

Ingredients:

1 small bunch of kale, chopped, cooked for about 3 minutes, drained, rinsed

2 cups whole-wheat or gluten-free macaroni, cooked

1 cup soy milk

1/3 cup tofu, diced

2 tbsp. vegan Parmesan

Instructions:

Simply, mix gently all the ingredients and pour into a baking dish. Bake until crisp, for about 20 minutes. Serve warm!

2 cups mushrooms

2 cloves garlic, minced

2 cups macaroni or elbow pasta, cooked

1 zucchini, diced

1 garlic clove, minced

Preheat oven to 350°F.Cook the gnocchi according to package directions. Rinse with cold water and set aside. In a small saucepan over medium heat, heat the olive oil. Add the zucchini and garlic and cook for 5 minutes. Stir in cheddar cheese until melted. Set aside. Place the mixture in a baking dish, and add the cheese/ zucchini mixture. Bake for 20 minutes. Serve and enjoy.
