1. Vegan tacos

Ingredients:
2 zucchini, diced
1 tsp. olive oil
1 tomato, diced
1 onion, diced
1 jalapeño, diced
1/2 cup silken tofu
1 cup bean, canned, drained, rinsed
Salt and pepper to taste
4 tortillas
Instructions:
Preheat the oven to 425°.
Place the diced zucchini in a lightly oiled shallow baking. Roast for about 10 minutes, stirring occasionally. Set aside and let cool. Add the zucchini in a bowl. Add the remaining ingredients and stir together well. Layer each tortilla layer with the mixture. Tightly roll up each tortilla. Done!
2. Vegan hot dogs

Ingredients:
1 package vegan hot dog sausages
Mustard
Hot dog buns, whole wheat
Instructions:
Cook the hot dogs according to the package directions.Place a hot dog in each bun. Add the mustard. Serve and enjoy.
3. Vegan Avocado sandwich
These vegan avocado sandwiches are packed with creamy avocado and tomato.
Ingredients:
4 slices whole wheat bread
1 avocado
Juice of 1 lime
Salt and pepper, to taste
2 tsp. olive oil
1 tomato, diced
Instructions:
Mash the avocado with a fork. Add the lime juice, olive oil, and tomato. Mix well. Divide the avocado mixture in two and spread over two slices of sandwich bread. Done!
4. Grilled tofu sandwich
This is one of the best veggie sandwiches ever! It is so delicious everyone will want more!
Ingredients:
12 oz package extra firm tofu
2 tbsp. tomato paste
4 tbsp. low sodium soy sauce or tamari
1 cup water
4 slices whole- grain bread
2-3 slices cucumber
Instructions:
Wrap tofu in a clean dish towel and weight it with something heavy. Leave it to drain for about an hour. Slice the tofu. Mix all of the remaining ingredients together in a plastic bag. Add the tofu and refrigerate for a few hours. Place tofu slices on the grill. Grill tofu 3 – 4 minutes on each side. Place the bread slices on a flat surface. Layer tofu on bottom bread slice, cover with cucumber. Top with the remaining bread slices. Bon Appetit!
5. Stuffed mushrooms
The filling for these stuffed mushrooms is meaty and spicy. They are also so good no one will know they’re vegan!
Ingredients:
2 tbsp. olive oil
1 pound mushrooms
1 onion, diced
1 clove garlic, minced
1/2 tsp. minced ginger
1 tbsp. soy sauce
Salt and pepper, to taste
Instructions:
Preheat the oven to 375°F.
Spray a baking sheet with cooking spray. Lightly oil a rimmed baking sheet. Clean the mushrooms and break off stems. Chop the stems.Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 2-3 minutes. Add the garlic and stems and cook for 5-8 minutes. Add the remaining ingredients and cook for 30 seconds. Set aside. Chop stems extremely fine, discarding tough end of stems.Using a little spoon, fill each mushroom cap with the mushroom mixture. Arrange the mushroom caps on prepared cookie sheet and bake for 20 minutes. Serve and enjoy.
