1. Avocado and cucumber sushi

This colorful avocado and cucumber sushi makes a delicious addition to any family table.

Ingredients:

½ avocado, peeled, cut into strips
½ cucumber, cut into strips
1/3 carrot, peeled, cut into strips, steamed
4 roasted seaweed sheets
1/5 cups sushi rice
5 tbsp. rice vinegar
Salt and pepper, to taste
1 tbsp. sugar

Instructions:

Cook the rice according to the package directions. When the rice is nearly finished, add the sugar, vinegar and season with salt and pepper. Set aside and let cool.Put a sushi mat on a clean cutting board. Put a sheet of nori on the mat. Spread the rice out evenly on the nori sheet.Arrange the vegetables in strips on top of the rice.Gently roll the bamboo mat. Cut sushi to desire sized. Done!

2. Spicy vegan sushi

Spicy vegan sushi is one of the easiest sushi rolls to make. This recipe is not only easy to make, but it is gluten-free!

Ingredients:

4 sheets nori
1 tomato, cut into strips
1 cucumber, cut into strips
Salt and pepper, to taste
1/2 tsp. minced ginger
1 1/2 cup sushi rice
1 ½ cup water
2 tbsp. rice vinegar
3 tsp. sugar
1 tsp. salt

Instructions:

Cook the rice according to package instructions. When the rice is nearly finished, add the rice vinegar, sugar, and salt. Cover the nori with an even layer of sushi rice. And add the ingredients in the center of the nori seaweed. Then use the mat and gently roll it roll into the center. Done!

3. Colorful vegan sushi rolls

You can make these delicious rolls in less than 30 minutes. Also, they are rich in fiber, protein, vitamins and minerals.

Ingredients:

4 nori wraps
½ avocado cut into strips
1 carrot, cut into strips
3-4 Tbsp. white miso paste
1 red bell pepper

Instructions:

Spread your miso paste along the edge of the nori sheet. Add the remaining ingredients. Roll your roll and slice.Done!

4. Avocado sushi rolls

These rolls are amazingly delicious and super healthy! Avocado is a nutritional powerhouse. It is rich in magnesium, potassium, and folate.

Ingredients:

2 cups rice
2 tbsp. sake
2 tbsp. vinegar
3 tsp. sugar
2 tsp. salt
4 nori sheets
1 avocado – peeled, pitted and sliced

Instructions:

Cook rice according to the manufacturer’s instructions. Rinse the rice well. Add the vinegar, sake, sugar, and salt. Place nori seaweed underneath the wrap. Spread the rice over nori sheet. Add the avocado and roll it up! Done!

5. Mushroom vegan sushi

So simple yet very delicious veggie roll! It could easily be served as a main dish instead of a side.

Ingredients:

1 cup cooked rice
1 tbsp. sesame oil
1 garlic clove, minced
5 shiitake caps, sliced into strips
1/4 cup vegetable broth
1 tbsp. soy sauce
4 sheets nori

Instructions:

In a medium skillet and over medium heat, add the sesame oil and garlic and cook for 1 minute. Add the mushrooms and cook for 5 minutes. Add the broth and soy sauce and cook for 15 minutes. Place the rolling mat on your work surface with a sheet of nori. Sprinkle the spread rice on the nori sheet and place the mushrooms in the middle of the nori. Roll it up. Serve and enjoy.
