1. Apple berry kale salad

Ingredients:

– 1 diced cucumber
– 1 diced apple
– 1 cup of berries
– 1 chopped kale head
– 4 tablespoon of lemon juice
– 1 1/2 tablespoons of olive oil,
– 1 1/2 tablespoons maple syrup
– 1 tablespoon of chopped basil
– Lemon zest
– Sea salt and pepper
– Pinch of cayenne pepper

In a large bowl, combine cucumber, apple, berries, and kale. In a small bowl, whisk remaining ingredients. Drizzle over cucumber mixture and toss to combine. Oil with vinegar and salt in a large bowl. Season with pepper. Stir in the wheat-berry mixture, kale, onion, and pepper.

– 1/4 cup chopped pistachios

– 1 cup blueberries
– 2 tablespoons sugar
– 3 tablespoons limoncello
– fresh mint
