The Casserole is a great family meal. They are super versatile and they make a great breakfast, lunch or a dinner. You can add any ingredient you like and let the oven do the rest. Here are some amazingly delicious vegetarian casserole recipes:

1. Lentil and Zucchini Casserole

This lentil and zucchini casserole makes a great vegetarian twist on a classic casserole recipe.

Ingredients:

2 tbsp. olive oil

1 medium onion, chopped

1 bell pepper, diced

1 cup tomato salsa

½ tsp. chili powder

1 tbsp. fresh basil, chopped

1 tbsp. fresh parsley, chopped

1 cup canned lentils, drained and rinsed

2 small zucchini, thinly sliced

1 cup canned corn, drained and rinsed

Salt and pepper, to taste

3 tbsp. Parmesan cheese, optional

Instructions:

Preheat your oven to 400º F. In a large saucepan, heat the olive oil. Add the onion and bell pepper and cook for 2-3 minutes. Add all remaining ingredients and cook for 3 more minutes. Set aside. Transfer the mixture to a lightly oiled casserole. Bake for 20 minutes. Serve warm .Done!

2. Cauliflower, Carrot And Tofu Casserole

This easy to make cauliflower, carrot, and tofu casserole makes a great meal for vegetarians and vegans.

Ingredients:

2 cups water

2 tbsp.  olive oil

1large onion, chopped

4 cups cauliflower, florets

Salt and pepper, to taste

2/3cup tofu, diced

2 small tomatoes, sliced

1 carrot, finely chopped

Instructions:

Preheat your oven to 400º F.In a saucepan, add the carrot and water, and cook for 15 minutes. Add the cauliflower florets and cook for 6 more minutes. In a large skillet, heat the olive oil. Add the onion and tomatoes and sauté for 2 minutes. Add the cauliflower florets /carrot mixture and cook for 3 minutes. Set aside. In a bowl,mix together all the ingredients. Transfer to a lightly oiled casserole. Bake for 40-50 minutes. Serve and enjoy!

3. Quick And Easy Veggie Casserole

This quick and easy veggie casserole is perfect for cold autumn days! Besides being vegetarian, this recipe is also gluten-free.

Ingredients:

1 zucchini, sliced

1 medium onion, sliced

2 cups mushrooms, sliced

2 small carrots, shredded

1 cup cauliflower florets

1 cup tomatoes, diced

3 medium tomatoes, sliced

1 cup bell pepper, sliced

3 tbsp. Parmesan cheese

Instructions:

Simply, add all the ingredients in an oiled baking pan (except the cheese and tomato sauce).  Top with the cheese and tomato salsa. Bake at 400 F for 1 hour. Done!

4. Sweet Potato Casserole

Ingredients:

1tbsp. olive oil

1 onion, halved and finely sliced

1 carrot, thinly sliced

1 celery stick, thickly sliced

2 medium sweet potatoes, quartered

1 tsp. Italian herb mix

1 cup vegetable stock

1 cup canned beans, drained

Instructions:

Preheat the oven to 400 F.  Heat the olive oil in a large skillet. Add the celery, onion, carrot and cook for 5 minutes. Add the remaining ingredients and cook for about 15 minutes. Transfer in a greased baking pan .Bake for 50 minutes. Done!

5. Spicy Bean Casserole

Ingredients:

1 cup peas, canned, drained

1 cup beans,canned, drained

1 cup mushrooms, thinly sliced

1 small chili pepper, thinly sliced

1 tomato, chopped

Salt and pepper to taste

2 tbsp. olive oil

Instructions:

In a medium bowl, add the olive oil, peas, beans, mushrooms, bell pepper, chili pepper, tomato, and mix until well combined. Transfer the mixture to a quart casserole dish. Bake for 4o min. Serve warm. Done!
