1 cup canned lentils, drained and rinsed
2 small zucchini, thinly sliced
1 cup canned corn, drained and rinsed

Preheat your oven to 400º F. In a large saucepan, heat the olive oil. Add the onion and bell pepper and cook for 2-3 minutes. Add all remaining ingredients and cook for 3 more minutes. Set aside. Transfer the mixture to a lightly oiled casserole. Bake for 20 minutes. Serve warm .Done!

2 cups water

1 carrot, finely chopped

Preheat your oven to 400º F.In a saucepan, add the carrot and water, and cook for 15 minutes. Add the cauliflower florets and cook for 6 more minutes. In a large skillet, heat the olive oil. Add the onion and tomatoes and sauté for 2 minutes. Add the cauliflower florets /carrot mixture and cook for 3 minutes. Set aside. In a bowl,mix together all the ingredients.
