– 2 avocados, peeled and chopped

Ingredients:

– 3 zucchini
– 2 stalks celery, chopped
– 1 cups finely grated carrots
– ½ cup feta cheese
– 1 cup fresh spinach, chopped
– 1 tomato, chopped
– 1 cucumber, chopped
– Salt and pepper, to taste
– 2 tsp. avocado oil
– 1/3 lemon, juiced

Instructions:

Preheat your grill to medium. Slice zucchini into quarters, lengthwise and lightly coat them with avocado oil. Place them on a preheated grill. Grill zucchini for about 4 minutes each side.
