Beat 1 egg and place in each muffin hole and stir. Add vegetables and tofu in each hole. Bake in the oven at 375 degrees for about 14 min.

You need: ½ cup rolled oats, ⅓ cup maple almond butter and ½ cup raisins, chopped. In a medium bowl, stir together all ingredients. Roll into eight balls and refrigerate overnight.

7. Overnight quinoa

Like overnight oats, overnight quinoa is another amazingly healthy and tasty breakfast. To save time at night without having to make a new batch of quinoa, prepare one big batch and freeze individual servings. You need 185 grams cooked quinoa, 120 ml unsweetened almond milk and 135 grams nonfat Greek yogurt. Mix all the ingredients in a glass jar. Stir well, cover, and put in the fridge for at least 4 hours or overnight. The next day, remove from the fridge, top with your favorite fruit, and enjoy.
