Cut avocados into triangular shapes. Roll turkey slices and cut into halves. Place turkey and avocado triangles on the skewers. Plate and drizzle with olive oil. Serve and enjoy.

Replace your tuna and crackers for something “fancy.” Replace your cracker with fresh cucumber and crab with tuna.
– 6 oz. crab meat
– 4 tbsp. fat-free mayo
– 2 cucumbers
– 1 scallion

– 4 tomatoes
– 16 ounces fresh mozzarella

– 12 small zucchini

– 6 cloves garlic, minced

Cut the ends of the zucchini and cut again in half lengthwise. Remove the insides, and reserve them for later. Heat olive oil in a large skillet kept on medium heat. Add garlic and onion and sauté until the onion is tender. Add reserved zucchini and mushrooms, and sauté another 3 min. Fill the zucchini by hand with your mixture. Place filled zucchini in a baking pan and add 1/3 inch of water. Bake at 400 F for 35 minutes. Remove the zucchini from the pan and serve while still warm. Bon appetit!
