Everyone loves cookies. However, the vast majority of what supermarkets sell is not vegan. Gluten-free cookies can also be loaded with added sugars. Making your own vegan gluten-free cookies isn’t hard. Here you can find five gluten-free recipes. Also, these recipes are healthy and easy to make!

1. Coconut gluten-free cookies

These coconut gluten-free cookies are soft, moist, and packed full of coconut flavor. They are also amazingly low in sugar.

Ingredients:

1 cup coconut flour
3 tbsp. coconut oil
1 tsp. vanilla extract
2 cups gluten-free flour
½ cup soy milk
3 scoops stevia extract, or to taste
1 tsp. baking soda
¼ tsp. salt

Instructions:

Preheat the oven to 400 F.in a medium bowl, add the coconut oil, soy milk, stevia, and vanilla extract. Mix until well combined. In a small bowl combine the remaining ingredients. Use a cookie scoop to shape cookie dough balls. Place each ball on a preachment- paper lined baking sheet and bake for 10 minutes. Serve and enjoy.

2. Almond gluten-free cookies

Most cookie recipes call for white sugar and all-purpose flour. These cookies are a vegan version of classic almond cookies. They are also gluten-free!

Ingredients:

1/4 cup coconut oil
1/3 cup honey
1/2 tsp. almond extract
1 cup almond flour
0/5 cups gluten-free flour
A pinch of salt
1/2 tsp. baking soda

Instructions:

Preheat the oven to 350 degrees F. In a large bowl, mix the dry ingredients together. In another bowl, mix the wet ingredients together.Mix the dry ingredients into the wet ingredients. Line a baking sheet with parchment paper. Shape the mixture into balls. Place on the prepared baking sheet and bake for 10 minutes. Serve and enjoy.

3. Cocoa gluten-free cookies

Not only these cookies taste great, they are also super easy to make, vegan and gluten-free!

Ingredients:

5 tbsp. oil
1 tsp. vanilla extract
½ tsp. baking soda
3 tbsp. cocoa powder
1/3 cup honey
A pinch of salt
2 cups gluten-free flour

Instructions:

Preheat the oven to 350 F.In a small bowl, and the oil, vanilla extract, and honey- mix until well incorporated. In another bowl, add the reaming ingredients and mix until smooth. Line the bottom of the pan with the parchment paper. Shape your mixture into balls. Place the cookies on a parchment paper-lined baking sheet. Bake for 10-12 min. Bon appetit.

4. Blueberry vegan cookies

Ingredients:

2 cups gluten-free flour
3 tbsp. coconut oil, melted
1 tbsp. honey
2 tbsp. blueberry jam, sugar-free

Instructions:

Preheat the oven to 375 F
In a medium bowl, mix together the coconut oil, gluten-free flour, and honey. Refrigerate for a few hours. Form the balls. With your thumb, make an imprint in the center of each ball and spoon a little jam into the imprint.Transfer to a parchment paper–lined baking sheet and bake for 10-12 minutes. Serve and enjoy.

5. Walnut gluten-free cookies

These vegan and gluten-free cookies are made from only six ingredients and can be made in less than 30 minutes.

Ingredients:

1/2 cup ground walnuts
1 cup brown rice flour
1/2 tsp. baking powder
A pinch of salt
3 tbsp. honey
4 tbsp. oil

Instructions:

Preheat the oven to 350 F. Line a baking sheet with parchment paper. In a bowl add the oil and honey. Mix until well incorporated. In another bowl, combine the flour, ground walnuts and baking powder. Combine all the ingredients together. Shape the mixture into balls. Place on a parchment paper and bake for 12 min. Done!
