4th of July almost here, which means outdoor parties, food, fireworks, and BBQs. This holiday may be a trigger for you to overeat, so remember to bring your own healthy foods to a BBK party.
Grilled vegetable are super tasty! Just pay attention to sauces and dressings, as they can be high in calories and unhealthy fats. To help you, we have listed some healthy recipes for July 4th.
1. Sweet potato salad
Besides being a great salad for 4th of July, this yummy sweet potato salad is perfect for people who have problems with dairy allergies.
Ingredients:
– 4 sweet potatoes, cubed
– ½ zucchini, chopped
– 1/2 carrot, diced
– 2 tsp. olive oil
– 1tbsp. parsley, chopped
– 2 tsp. fresh lemon juice
– Salt and pepper, to taste
Instructions:
In a medium pan, boil the potatoes and cook 15-20 min. Drain the potatoes and let cool. Mix all the ingredients and serve. Enjoy!
2. BBQ broccoli
This super easy to make broccoli makes a great side dish for 4th of July.
Ingredients:
– 1 head broccoli
– 1 cup plain yogurt
– Salt and pepper, to taste
Instructions:
Preheat your grill. Bring a large pot of water to a boil. Add 1 tsp. salt and the broccoli. Cook for 15 minutes. Remove the broccoli from the pot and sprinkle with salt and pepper. Place on the barbecue and cook for 2 minutes each side. Serve with plain yogurt. Enjoy your healthy meal!
3. Sweet potato burgers
These delicious vegan burgers are easy to prepare, and they are so much better than store-bought ones.
Ingredients:
– 2 sweet potatoes, peeled, chopped
– 2 cups beans, drained
– 1 onion, chopped
– 1 tbsp. fresh parsley, chopped
– 1 clove garlic, minced
– Salt and pepper to taste
– Olive oil
– 2 burger buns, whole wheat
Instructions:
Preheat the grill. Cook the potatoes in boiling water for about 30 minutes. Mash the potatoes and beans. Add rest of ingredients. Mix again and form into patties. Add some olive oil and grill them for about 2 min. per side. Serve your tasty veggie burgers while still warm.
4. Healthy corn on the cob
Everybody loves corn on the cob. It is tasty and healthy summer snack, with only 60 calories!
Ingredients:
– 4 garlic cloves, minced
– 12 ears corn, husked and cleaned
– Olive oil
– Salt and pepper, to taste
Instructions:
Preheat your grill. Wrap each corn in aluminum foil. Add 1 tsp. of olive oil, and 1/3 tsp. garlic on each corn, and sprinkle with salt and pepper. Wrap them with the foil and grill about 30 min. Turn them every 5 min. Your healthy corn on a cob is ready.
5. Strawberry watermelon juice
This tasty and refreshing strawberry watermelon juice is the perfect drink for your 4th of July BBQ.
Ingredients:
– 4 cups strawberries
– 2 tbsp. lime juice, fresh
– 4 cups mineral water (cold)
– 4 cups watermelon
– Ice cubes (optional)
Instructions:
Juice or blend all the ingredients. Add more lime juice, watermelon or strawberries, if you like. Garnish with sliced strawberries and limes. Your delicious juice is ready! Serve with the ice cubes.
