– 2 cups mashed sweet potatoes

Heat the oil over medium-high heat and cook onions for 2-3 minutes. Add mushrooms and cook for 2 minutes more. In a food processor, process all the ingredients until well combined. – 1 clove garlic, minced

– 2 tbsp. olive oil
– 2 onions, sliced
– 2 mushrooms, sliced
– 2 cups quinoa
– 1 cup black beans, cooked
